Health benefits so far

I’ve been eating a ovo lacto diet for the previous week. So far my health has made a huge improvement. As soon as the eggs and pasta are gone I’m going on a strict lacto vegetarian diet. On the fence about removing dairy as well. The thing I really like about dairy is those fancy dessert cheeses, as well as ice cream. Fortunately there are vegan ice cream these days (contains no egg or dairy). But I haven’t been able to find a corresponding substitute cheese. I kind of suspect the vegan cheeses to if not being made from soy, contain it.

There are however vegan milk that’s not made from soy. Are there any vegan cheeses made from either almond, coconut, oats, or rice?
